1/2 cup of raisins
1/2 cup of coconut sugar
1/2 cup of maple syrup
1/2 cup coconut oil, melted
1 teaspoon of fresh vanilla beans
2 teaspoons of cinnamon
2 cups of almond flour
1 teaspoon of baking powder
Cut the apples into cubes.
Heat the coconut sugar in the slow cooker pot. Add the raisins, three tablespoons of water and the apples. Cook until it is lightly brown in color and the apples are soft. Replace in the slow cooker and set to high cooking mode.
In a bowl, combine the eggs and 1/2 cup of maple syrup. Whisk until light and fluffy. Add in the vanilla beans and the cinnamon.
Sift in the almond flour and baking powder and fold in. Mix in the melted coconut oil. You can mix everything in the food processor. Pour mixture on top of the apple mixture.
Cover and cook over high heat for 2 hours. It’s done when a toothpick inserted comes out clean. Enjoy with a simple yogurt sauce made by combining equal amounts of yogurt and coconut cream and maybe a little maple syrup if you like it sweeter.
You can make this in a pot over the kitchen stove, I recon it should cook for approximately 40 minutes over medium heat but one should always check as the time differs on different divices. The test with the toothpick that should come out dry when inverted is always a good indication for when it is ready!
