One of the tastiest things we had on our brunch, to accompany our coffee was these awesome raw cookies filled with vanilla cashew nuts cream! 


For the biscuits:

1 cup of walnuts 

1 cup of dates 

Pinch of salt

1 teaspoon of vanilla beans 

3 teaspoons of raw cacao

For the cream filling:

1 cup of cashew nuts soaked overnight 

1 tablespoon of coconut oil

1 teaspoon of vanilla beans

1 tablespoon of agave syrup 


Process the the ingredients for the biscuits in a high speed food processor, until they reach a dough like consistency. Roll the mixture into a large ball and flatten on cutting board between two pieces of parchment paper with a rolling pin. Cut them with a cookie cutter and refrigerate until firm.

In the meantime drain the cashew nuts and add in the food processor the filling ingredients until smooth. Spread the filling onto the chilled cookies and sandwich together. Store the cookies in an airtight container in the fridge.
