This is my favorite breakfast at the moment. I was thrilled to discover that porridge can be made to taste this good. It is also great for chilly mornings when you need something to warm you up. It will keep you full and energized till lunch.
3 tablespoons oats (I use gluten free)
1 cup of coconut milk
1 tablespoon raisins
1 tablespoon crushed line seeds
1 tablespoon pumpkin seeds
2 tablespoons dried shredded coconut
1 teaspoon of cinnamon
1 teaspoon of turmeric
1 teaspoon of nutmeg
pinch of salt
1/2 teaspoon of vanilla beans
maple syrup to taste
1 apple grated
In a pan boil the coconut milk with the oats for a few minutes until a thick cream forms. Add all the rest of the ingredients and stir until well combined. Top it up with maple syrup and make it as sweet as you like it. Enjoy your breakfast!
