This is a great snack to indulge in post-workout. You can have it as it is or you may add it to your porridge or your yogurt together with fresh fruits.
1 cup of almonds
1 cup of pecans
1 cup dried of shredded unsweetened coconut
1/3 cup of line seeds
1/3 cup of chia seeds
1/2 cup of sunflower seeds
1/2 cup of pumpkin seeds
1 cup of cashews
1 heaped table spoon of honey
1 tablespoon of olive oil
1 teaspoon of cinnamon
Over low heat, mix the honey, the oil and the cinnamon to make the mixture slightly runny. In a large bowl mix all the rest of the ingredients and pour the honey mixture on top. Combine everything together with a spoon until nicely mixed.
In a tray covered with parchment paper spread the granola mixture and bake it in the oven for 45 minutes at 135C.
When ready let it cool and store in an airtight container.
