This is a fun and easy entry dish. Works great as a healthy snack too.
2 large cucumbers
2 cups cooked chickpeas
3 tablespoons olive oil
1 teaspoon cumin
Juice of one lemon
2 tablespoons of tahini
Salt and pepper to taste
1/2 cup if water
First mix all the ingredients except the cucumbers in your food processor until you get a creamy hummus.
Next cut the cucumbers in 3 cm long pieces. With a small spoon remove the seeds from half of the upper part of each piece to create a small cup.
Now scoop some hummus in each cup and your entrees are ready!
