This cake is simple, fast and easy to make. All the ingredients are probably things you already have in your pantry.
For the cake:
2 cups almonds
200 gr agave syrup
the zest of 3 oranges freshly grated
1 tablespoon of sunflower oil
For the orange syrup:
The juice of 3 oranges
3 tablespoons of coconut sugar
For the chocolate glaze:
4 tablespoons of coconut oil
1/3 cup of raw cocoa powder
150 gr agave syrup
Preheat the oven at 180 C. Grease a springform tin with a tablespoon of sunflower oil. In the mixer ground the almonds until you get a flour like consistency. Then add the rest of the ingredients and beat them well in the mixer, making sure they all blend very well. Pour this mixture in the tin and bake for 25 minutes (time may vary between different ovens).
Fo the orange syrup pour the ingredients in a pan and mix well over low heat. After a few minutes you will get a thick syrup. Set aside and let it cool down.
Once the cake is baked prick it all over with a fork and pour over the syrup. Let it cool down.
For the chocolate glaze, melt the coconut oil over low heat, add the agave syrup and the cocoa powder. Mix all ingredients well. Pour the chocolate glaze over the cake and it’s ready!
